Sebby’s Scrolls

Fitzroy Street Mascot Seagull

Business details

Sebby’s Scrolls was founded by husband-and-wife team Sebastian and Annabelle (“Sebby and Belle”), who have been cheffing together since 2017. During the 2020 lockdowns, Seb began baking cinnamon scrolls at home as a hobby, but soon became obsessed with perfecting the recipe. Convinced no one was making scrolls like his, he teamed up with Belle to share them more widely.

What began as a small project quickly exploded — within their first year, Sebby’s Scrolls were stocked in over 50 cafes across Melbourne, with more than 100 others on a waitlist. The overwhelming demand led them to open their own retail space in Caulfield South, which they renovated into a takeaway window in 2023. Building on this success, a second store was opened in St Kilda in July 2025, further expanding their reach and bringing their famous scrolls to even more Melburnians.

Today, Sebby’s Scrolls has grown into a team of 30+, producing up to 7,000 scrolls weekly. Known as Melbourne’s best cinnamon scrolls, they continue to delight customers with delicious bakes and warm, welcoming spaces.
